Last year was the first time I cooked with tomatillos from getting it in my CSA farmshare. Of course this had to be done! I should remember to buy tomatillos more often so I can always have this delciously easy to make, spicy green sauce onhand!

 

1.5 lbs tomatillos, husked and cleaned
1 cup fresh coriander, chopped
3 serrano chilis, seeded and roughly chopped
1/2 white onion, peeled and roughly chopped
3 cloves garlic, peeled and minced
1 lime, juiced
3/4 tsp sea salt

 

  • Put cleaned tomatillos in a saucepan. Fill with water and bring to a boil. Then, turn off the heat and let rest for 5 minutes. 

  • Drain and place in a food processor. Process until smooth. 

  • Add the remaining ingredients and pulse 3-4 times.
