No need to wait for the ferment to get all the yummy kimchi flavors! This spicy slaw is perfect for any time of year.
1-2 kohlrabi and some radishes, cut into matchsticks
1 carrot julienned, or a handful of green beans, cut into 1/4" segments
1/4 cup leafy greens and/or red cabbage
1 clove of garlic, peeled and finely chopped
2 tsp light sesame oil
1 tsp rice vinegar
1 tsp brown rice syrup
1 tsp fresh lime juice
1 Tbsp Korean red pepper powder (gochugaru 고추가루)
1/2 tsp low-sodium tamari or soy sauce
Handful of unsalted peanuts or sesame seeds
1 teaspoon coriander or parsley, finely chopped
Mix all all the ingredients together, tossing well. Refrigerate for 20 minutes before serving. .
