When I was a child, I loved frozen bananas, most likely it was a processed amusement park treat. I doubt we ever made them, but how easy is it to stick a banana in the freezer? I actually always have frozen banana slices onhand for smoothies and to relieve a sweet craving, but sometimes it's nice to add a little something to make it special. With this 3-ingredient homemade chocolate, it's a cinch. 

 

2 bananas
peanut or almond butter
1/4 cup 100% cocoa powder

1/4 cup coconut oil, melted

1/4 cup maple syrup, room temperature
1/4 cup peanuts or almonds

 

  • Slice the bananas into an even number of slices. 

  • Chop or crush the nuts and set aside on a small plate. 

  • Spread the nut butter in between two slices. Continue with the rest of the slices until you have a lot of little banana "sandwiches". 

  • In a small bowl, mix the cocoa powder, coconut oil, and syrup until smooth and combined.

  • Dip each banana sandwich into the  chocolate. Then lightly dip into the chopped nuts. Set onto a tray (that'll fit into your freezer) lined with parchment paper. Continue with the rest, setting each of them a couple inches apart from each other. 

  • Once finished coating the bottoms, drizzle and spread a tablespoon of the chocolate on each banana stack. Sprinkle evenly with the remaining chopped nuts. 

 

If you have any leftover chocolate, throw in any nuts, seeds or dried fruit you may have in your pantry and chocolate cover them, Freeze together with the Banana Bites.
